TÓM TẮT
Nghiên cứu này nhằm xác định hiệu quả tác dụng của các hợp chất sinh học chitosan kết hợp với nisin và các muối của axit hữu cơ (natri diaxetat, natri lactat) đến khả năng ức chế các vi sinh vật trên bề mặt thịt, kéo dài thời gian bảo quản, đảm bảo vệ sinh an toàn thực phẩm, nâng cao giá trị gia tăng của các sản phẩm thịt lợn. Các kết quả cho thấy nồng độ thích hợp của dung dịch là chitosan 0,83%; natri diaxetat 0,1%; natri lactat 2,92%; nisin 810,91IU/ml. Áp dụng phương pháp phun sương với áp lực phun là 5,4kg/cm2, lượng dung dịch phun là 20ml/kg và bao gói hút chân không trong túi PE thịt có thể kéo dài thời gian bảo quản thịt lợn tươi đến 15-16 ngày, trong khi đó mẫu đối chứng (thịt không qua xử lý) thời gian bảo quản chỉ khoảng 5-6 ngày.

ABSTRACT This study is aimed to determine the inhibition ability of chitosan, a biological compound, combined with nisin, sodium diaxetat and sodium lactate for microorganisms on meat surface. The results of this work provided the method to prolong the shelf life and increase the value of pork meat. Therefore the food safety will be ensured. The results showed that the appropriate concentration of chitosan, sodium diacetate, sodium lactate, and nisin was 0.83%, sodium diaxetat 0.1%, sodium lactate 2.92%, and 810.91IU nisin/ml. Application of the spray method with injection pressure of 5.4kg/cm2, volume of liquid sprayed of 20ml/1kg, and packing in vacuum plastic bags could prolong the storage life of fresh pork from 15-16 date, while the storage life of control samples (untreated meat) was only 5-6 days.
